Smoky BBQ Pulled Pork

If you’ve been following us recently then you’re familiar with the close of our successful IMG_4831Kickstarter campaign. It has propelled us forward as we busy ourselves with rewards for our backers and a new wave of large orders for Slow Cooker Spice Blends.

After a frantic week of running to and fro between our co packer, who is carefully measuring our spices to our proprietary blend recipes, and the Planet Access team who is hand labelling the finished spice blends, by Thursday morning the thought of planning another family dinner was onerous. I was staring at 1200 individual spice packets, all ready for their final quality control check.

I called Meg and said “I’m exhausted but I just had a great idea, I’m going to cook pulled pork for the weekend using our own Smoky BBQ blend!” I said it with humor, like this was a revolutionary idea. Somewhere in amongst all of our hard work I had forgotten we have created exactly what I needed for that moment. 

At 7.30am on Friday morning I unwrapped the pork and placed it into the slow cooker, smothered it in our Smoky BBQ blend, poured a 1/4 cup of cider vinegar in there, and set the timer on LOW for 10 hours. The entire preparation process took less than 5 minutes and I sat down to work at 7.35am knowing that dinner was DONE. I also knew that any leftovers were going into tortillas or tacos the following evening. 

Sometimes we’re so caught up in things that we forget what’s right in front of us.

On Friday evening we devoured the pulled pork sandwiches and coleslaw in front of a movie and I plan to make pulled chicken this Friday using exactly the same rub and vinegar.

Carolina Pulled Pork
Prep Time: 5m, Cook Time: 8-10 hours LOW / 4 - 5 hours HIGH, Servings: 4-6

Ingredients
  1. 2 1/2 lbs pork shoulder
  2. 1 Smoky BBQ blend or your favorite BBQ rub
  3. 1/4 cup cider vinegar
  4. dipping sauce (optional)
  5. 1/2 cup / 4 fl oz cider vinegar
  6. 1/4 cup / 2 fl oz water
  7. 2 tbsp tomato ketchup
  8. 1 tbsp brown sugar
  9. 1/2 tsp red pepper flakes
  10. 1/4 tsp salt
  11. dash of tabasco
Instructions
  1. rub the pork with the Smoky BBQ blend; transfer to the slow cooker or refrigerate overnight
  2. add the cider vinegar to the pork
  3. cover and cook on LOW: 8-10 hours or HIGH: 5 hours
  4. shred the pork in the slow cooker using 2 forks
  5. mix the remaining ingredients for the dipping sauce in a small jug or use your favorite BBQ sauce
Notes
  1. serve on a toasted pretzel or brioche bun, drizzle with sauce, serve with a side of fresh coleslaw
  2. pair with an India Pale Ale, fresh lemonade or tart hard cider
