Persian Spiced Sausage, White Beans and Greens Stew
Shopping list at a glance: onion, celery, turkey sausage, butternut squash, northern beans, broth, kale
From your pantry: olive oil, salt & pepper
2 tbsp light olive oil
1 cup onion, diced
1 cup celery, diced
1 lb turkey sausage meat, rolled into 1 inch balls
1 tbsp sweet & spicy ground spice blend
3 cloves garlic, crushed
2 cups butternut squash, cubed
2 cans Northern beans
4 cups / 32oz beef broth
2 cups kale or other greens, washed and roughly chopped
Step 1 Lightly sauté the onion and celery in olive oil for for 2-3 minutes.
Step 2 Add the meatballs and roll around in the pan until lightly colored 2-3 minutes.
Step 3 Stir in the sweet & spicy ground spice blend, garlic, squash, beans and beef broth.
Step 4 Cover and cook on LOW for 6 hours. Remove the lid and add in the kale or greens. Replace the lid and cook for a further 30 minutes on LOW.
Serve with a crusty loaf and a squeeze of lemon juice.
