Maple French Toast Casserole

Ingredients
  1. 6 cups / 1 loaf brioche or cinnamon swirl bread, cut into 1 inch cubes
  2. ¾ cup / 4 oz raisins (or dates)
  3. 2 ½ cups / 20 fl oz whole milk (or 2% / almond /rice / milk
  4. 7 large eggs
  5. 1 cup / 8 fl oz heavy cream or half & half
  6. ¼ cup / 2 oz granulated sugar
  7. ¼ cup maple syrup
  8. 2 tsp vanilla extract * we use Neilsen-Massey Madagascar Bourbon Pure
  9. Sweet & Spicy blend
  10. 1 cup candied pecans, coarsely chopped OPTIONAL *
Instructions
  1. coat the inside of your slow cooker with vegetable oil or cooking spray
  2. spread bread in the bottom of the slow cooker
  3. sprinkle the raisins over the top
  4. whisk milk, eggs, cream, sugar, maple syrup, vanilla, sweet & spicy blend and syrup together. pour mixture over bread cubes and press lightly to make sure all the bread is submerged.
  5. over and cook on HIGH for 2 hrs 30 minutes or LOW for 4 hours
Notes
  1. so easy to prep the night before and refrigerate before cooking the next weekend, making a great weekend brunch dish
  2. sprinkle with candied pecans or toasted almonds & serve with yoghurt, fresh fruit, cream or ice cream
  3. CANDIED PECANS*
  4. 1 egg white plus 1 tbsp water
  5. 1/4 cup sugar
  6. pinch of salt
  7. 3/4 cup pecan halves
  8. whisk the egg white & water until frothy
  9. mix the sugar & salt in a small bowl
  10. stir the pecans into the egg white mixture to coat
  11. transfer the pecans to the sugar mixture and coat
  12. spread the pecans on a baking sheet and bake for 20m in an oven at 350 degrees, stir them after 10m
  13. leave to cool
