Tangy Salmon Tacos
Prep Time: 10m, Cook Time: 3-4 hours LOW / 2 hours HIGH , Servings: 6 (16 small tortilla)
  1. 1 lb salmon fillet, 2 thick pieces
  2. 2 tbsp olive oil
  3. 1 lime, zested & juiced
  4. 1 Southwest Fiesta blend
  5. 1/2 tsp salt
  6. Mango Salsa (store bought or recipe here)
  7. 1 small mango, diced
  8. ¼ cup cilantro, chopped
  9. ¼ cup red onion, chopped
  10. ¼ cup red/green peppers, chopped
  11. pinch cayenne
  12. lime, juiced
  13. avocado
  14. 6 small tortilla, sour cream, 2 ripe avocados
  1. in a small bowl mix the olive oil, lime juice, Southwest Fiesta blend and salt
  2. rub the mixture onto the salmon pieces
  3. lay the pieces of salmon in your slow cooker
  4. cover and cook on LOW: 3-4 hours or HIGH for 2 hours
  5. break the salmon up with a fork in the slow cooker
  1. spread each tortilla with avocado, lay the salmon on the avocado and top with the salsa before rolling the tortilla up
