Taco Chili
Prep Time: 15m, Cook Time: LOW for 6-8 hours / HIGH for 3-4 hours, Servings: 4-6
  1. 1 tbsp light olive oil
  2. 1 cup / 1 small onion, diced
  3. 1 cup / 1 small red bell pepper, diced
  4. 1lb ground beef
  5. 1 Southwest Fiesta blend
  6. 1 x 14oz can kidney beans, drained
  7. 1 x 14oz can diced tomatoes
  8. 1 tbsp tomato paste
  9. 1 cup corn
  10. 2 tbsp flour
  11. 1/3 cup / 2 1/2 fl oz water
  12. toppings - cilantro, sour cream, shredded cheese
  1. heat the oil in a skillet on medium; sauté the onion and pepper
  2. transfer onion mixture to slow cooker
  3. add the ground beef to the skillet and brown for 1 minute
  4. transfer the beef to the slow cooker
  5. sprinkle Southwest Fiesta blend over the mixture in the slow cooker
  6. add the kidney beans, tomatoes, tomato paste, corn, flour and water
  7. stir, cover and cook on LOW: 6-8 hours or HIGH: 3-4 hours
  1. spoon into bowls and top with sour cream, shredded cheese and cilantro
