Chorizo & Garbanzo Stew

Ingredients
  1. 2 tbsp olive oil
  2. 1 cup / 1 small onion, diced
  3. 1 cup / 2 stalks celery, diced
  4. 1/2 cup carrot, diced
  5. 2 tsp / 4 cloves garlic, minced
  6. 2 tbsp tomato paste
  7. 28 oz canned, diced or crushed tomatoes
  8. 1/4 cup red wine
  9. 1 tbsp brown sugar
  10. 1/2 tsp salt
  11. 2 x 14oz cans garbanzo beans, drained and rinsed
  12. 6oz chorizo, sliced into 1/4 inch rounds
  13. 4 cups / 32 oz chicken broth
  14. 1 Marinara blend
Instructions
  1. heat the olive oil in a skillet on medium; sauté the onion, celery, carrot and garlic
  2. transfer onion mixture to slow cooker
  3. stir in the tomato paste, diced or crushed tomatoes, red wine, brown sugar, salt, garbanzo beans, chicken broth & chorizo
  4. sprinkle in the Marinara blend
  5. stir, cover and cook on LOW: 8 hours or HIGH: 4 hours
Notes
  1. spoon into large bowls and serve with crusty bread
  2. alternative serving suggestion: add chopped, fresh avocado and stir in a tbsp of sour cream
  3. pair with an aromatic and full bodied Verdejo white wine
