Ingredients
  1. 1 tbsp olive oil
  2. 1 x 28 oz canned diced tomatoes
  3. 1 cup / 1 small onion, diced
  4. 1 cup / 2 celery ribs, diced
  5. 1/2 cup / 1 large carrot, diced
  6. 2 tsp / 4 cloves garlic, minced
  7. 1 tbsp tomato paste
  8. 1/2 cup / 4 fl oz red wine
  9. 1 tbsp brown sugar
  10. 1/2 tsp salt
  11. 1 Marinara blend
  12. 2 lbs live mussels, cleaned
  13. 1 1/2 cups Marinara sauce (above)
  14. a handful of chopped parsley
  15. 1 loaf crusty bread
Instructions
  1. combine the olive oil, tomatoes, onion, celery, carrot, garlic, tomato paste, red wine, brown sugar, and salt in the slow cooker
  2. sprinkle in the Marinara blend
  3. stir, cover and cook on LOW: 8 hours or HIGH: 4 hours
  4. in a heavy pan combine the mussels and 1 1/2 cups Marinara sauce
  5. cover and cook on a medium heat for 3-4 minutes, shake the pan to coat the mussels in the sauce
  6. the mussels are cooked when the shells open up
  7. dIscard any mussels which remain closed
Notes
  1. sprinkled with fresh chopped parsley and serve with crusty bread to soak up the delicious sauce
  2. pair with a dry rosé such as Italian Bardolino Chiaretto
