Chicken Marbella
Prep time: 10 m, Cook Time 3-4 hrs HIGH or 7-8 hrs LOW, Servings 4-6
  1. 1 tbsp olive oil
  2. 1/4 cup red wine vinegar
  3. 1/2 cup pitted prunes
  4. 1/4 cup pitted Spanish green olives
  5. 1/4 cup capers with a little juice
  6. 1 Coq au Vin Slow Cooker Spice Blend™
  7. 2 tbsp garlic, crushed
  8. 1/2 tsp each of salt
  9. 2 1/2 lbs skinless, boneless chicken thighs
  10. 1/3 cup brown sugar
  11. 1/2 cup white wine
  1. in a mixing bowl combine the olive oil, vinegar, prunes, olives, capers, Coq Au Vin blend, garlic, salt and chicken.
  2. stir the sugar and wine into the chicken mixture
  3. transfer all the mixture into your slow cooker and turn to low for 7-8 hrs or high for 3-4 hrs
  1. overnight prep - before step 2, cover and refrigerate the chicken mixture for a few hours or overnight. when ready to cook, stir in the sugar and wine and follow step 4.
