Chocolate & Liqueur Laced Fondue

We’re finishing up the year with a fun and festive classic reinvention of Swiss fondue, using chocolate and liqueur. I’m back at home with my parents this New Year’s Eve and being a child of the ’70’s I managed to dig out and dust off my mum’s original fondue set complete with colored skewers. IMG_20151229_100726435_HDR

As I was poking around in the pantry collecting ingredients for the recipe, I discovered a bottle of Nielsen-Massey Vanilla Extract, our zen favorite, which travelled the same 4000 miles as us to get here.IMG_20151229_085136971

Since this is a slow cooking blog we adapted a chocolate fondue recipe and it’s a home run for a small New Year’s Eve party at home.

For the adult version spike it with your favorite liqueur which will give it a warm kick and a silky texture.

This is *not* a dessert pretending to be healthy but it goes a long way, especially if you’re dipping fruit!

Preparation Time: 5 minutes

Cooking Time: 1 hour on LOW

Servings: 12

Ingredients

  • 16 ounces bittersweet chocolate, coarsely chopped
  • 1 cup heavy cream
  • 1 tsp vanilla extract
  • Pinch kosher salt
  • 2 tbsp liqueur of your choice – bourbon, orange, coffee or hazelnut (optional)
  • Dippers like pretzels, strawberries or waffles

Put the chocolate, cream, milk, vanilla and salt in a heatproof glass bowl that fits completely inside your slow cooker. Cover and cook on low for 1 hour.

After 1 hour remove the bowl of chocolate carefully from the slow cooker. Stir the chocolate mixture until smooth and stir in the liqueur if using.

Switch the slow cooker to the warm setting or spoon immediately into a serving bowl
