Chilled Spicy Cauliflower Soup

In an effort to reduce the heat in my kitchen my slow cooker came to the rescue this week when our AC broke down, on the IMG_4417hottest day of the year nonetheless. 

A favorite recipe from the early days of the blog, chilled spicy cauliflower soup is a Summer favorite for Meg and I. With just 6 ingredients and limited preparation it’s a low effort dish to prepare which you can store in the refrigerator and eat over a few days. It’s creamy, and the aromatic curry flavors became the foundation for our Indian Dal slow cooker spice blend.

Curried Cauliflower Coconut Soup
Prep Time: 15m, Cook Time: LOW 5-6 hours / HIGH 3 hours, 5m manual Instant Pot, Servings: 4-6

Ingredients
  1. 2 tbsp olive oil
  2. 2 tsp / 4 cloves garlic, minced
  3. 1 cup / 1 large white onion, diced
  4. 1 Indian Dal blend or 1 tbsp Madras curry powder
  5. 1 whole cauliflower, chopped roughly
  6. 4 cups / 32 fl oz chicken broth, low sodium
  7. 1/2 tsp salt
  8. 1 can coconut milk
Instructions
  1. heat the olive oil in a skillet on medium; soften the garlic and onions for 2 minutes
  2. transfer the mixture to the slow cooker
  3. sprinkle in the Indian Dal blend
  4. add the cauliflower, chicken broth, salt, coconut milk
  5. stir, cover and cook on LOW for 5-6 hours or HIGH for 3 hours
  6. once cooked use an immersion blender and blend to a creamy consistency
Instant Pot Directions
  1. heat the oil on sauté function ,medium, and soften the onion and garlic for 2 minutes until translucent
  2. sprinkle in the curry powder
  3. add the cauliflower, vegetable broth, and salt
  4. secure the Instant Pot lid and pressure valve to Sealing
  5. press the Manual button and adjust the cook time to 5 minutes
  6. turn the dial to Venting and use Quick Pressure Release
  7. stir in the coconut milk and blend to a creamy consistency using an immersion blender
Notes
  1. for added decadence stir in a little truffle oil at the end
  2. the soup can be served immediately or chilled
