Anise Pork Tenderloin with Mango Mojo

The final recipe in our series of adaptations from The Bread and Buddha blog features pork tenderloin with a fennel and black pepper crust.P1000509-1

Pork tenderloin is the leaner way to enjoy pork and fits Pam’s “Heart Recipe”* collection.

The slow cooker, while perfect for long slow cooking and braising of tougher and fattier cuts of meat also lends itself to fillet, which naturally requires a much lighter touch and a shorter cook time. This is why it fits nicely into our “afternoon prep” recipe collection.

Tenderloin is ideal for popping into the slow cooker at 3pm just before school pick up or on a weekend. It will cook optimally on low for 3 hours and each slice will maintain its moist texture when carved. Topped with Pam’s refreshing mango mojo sauce provides a bright addition to a late summer dinner.

Serve with seasoned potatoes or rice, something to sweep up the extra mojo! 

Anise Pork Tenderloin with Mango Mojo

Ingredients
  1. Mango Mojo
  2. 1 mango, peeled and coarsely chopped
  3. 1/8 cup fresh lime juice
  4. 1 tsp / 2 cloves garlic
  5. 1/2 tbsp chopped fresh jalapeño
  6. ½ tsp salt
  7. 1/4 cup fresh cilantro
  8. Anise-Seed Rub
  9. 1 tbsp fennel / anise seeds
  10. 1/2 tsp black peppercorns
  11. 1tsp salt
  12. 1 tsp sugar
  13. 1 tbsp olive oil
  14. Pork
  15. 1.5lb pork tenderloin, trimmed
Make mojo
  1. purée mango, lime juice, garlic, jalapeño, salt & cilantro in a blender & set aside
Make rub and marinate pork
  1. finely grind fennel / anise seeds in an electric coffee/spice grinder with salt and sugar. (I didn't have time so crushed them with the back of a spoon and mixed with the pepper, salt and sugar.)
  2. stir in the oil and brush the rub onto the pork
  3. place in a plastic bag and marinate for 1 hour up to 8 hours, or use immediately
  4. place the pork and marinade ingredients in the slow cooker
  5. set to cook on LOW for 3 hours.
  6. slice pork and serve with mojo
